Anzac Biscuits

Anzac Biscuits
3-4 dozen
‘a crunchy oatmeal cookie. they were the only cookies that could survive the trip from Australia to the soldiers in WWII stationed in Turkey’

1 c. desiccated coconut–ground coconut
1 c. rolled/old fashioned oats
1 1/4 c. plain flour
1 c. white sugar
1/4 c. brown sugar
4 oz (1/2 c.) + 2 TB butter
5 TB. golden/maple syrup
2 tsp. baking soda
1 TB + 2 tsp. boiling water

1. In a bowl mix the flour, sugars, oats, coconut
2. In a small sauce pan melt the butter and syrup
3. In a small bowl, after the butter and syrup is melted, combine the baking soda and hot water. Immediately add to the syrup/butter mixture.
4. Place the mixture in with the dry ingredients
5. Preheat oven to 350/175
6. Place ‘ping pong’ sized balls of shaped dough on a greased sheet and place in preheated over for about 15 minutes. They will LOOK BROWN. That’s ok. They are NOT ready to be taken out of the oven until they are browned over the top of the whole cookie
7. Let sit on the baking tray for about 2 minutes
8. Let cool COMPLETELY. They are meant to be very crisp

    I will be making these when I get a chance. They remind me of my Aussie friends from school. That and Pavlova were such good regional food.

    Aaaah! I’ve seen this recipe before and always wanted to make some. Now that I’ve got a friend who lives in Oz, I HAVE TO!!
